共轭亚麻酸油凝胶稳定非水相泡沫的研究

Abstract_FL The crude product of high-melting conjugated linolenic acid(CLN)extracted from tung oil was mixed with low-melting olive oil at high temperature,followed by rapid cooling to induce gelation of the system,and vigorous stirring to generate non-aqueous foam.The results showed that the overflow volume increased with the concentration of the olegel,with a maximum foamability of 77%observed for 15%crude CLN.The foam exhibited excellent stability at room temperature for over 92 h and shown good temperature sensitivity.Optical microscopy and polarized microscopy revealed that the foam was stabilized by small crystalline particles absorbed at the interface of the foam.
