Abstract 食事による体脂肪蓄積の制御は, 生活習慣病予防の観点から非常に重要である。動物油脂は, 植物油と比べて体脂肪として蓄積しやすい。ラットを用いて, 飽和脂肪酸がその原因物質であることを証明した。さらに, 飽和脂肪酸摂取による体脂肪蓄積増大は, 交感神経活性低下による食事誘発性体熱産生の減少, 甲状腺ホルモンを介したNa+, K+-ATPase活性低下および脂肪組織リポタンパク質リパーゼ活性上昇など, 複数のメカニズムが関与しうることを示した。健常人を対象とした試験で, 中鎖トリアシルグリセロールは, 長鎖トリアシルグリセロールと比べて, 体脂肪として蓄積されにくいことを実証した。中鎖トリアシルグリセロールを長鎖トリアシルグリセロールとエステル交換することにより, 加熱調理適性は大きく改善されることを見出した。本エステル交換油は, エネルギー化されやすく, 体脂肪として蓄積されにくいことを示した。これらの結果は, 肥満予防の食事管理においては, 脂肪の摂取量だけでなく, 脂肪の質にも配慮すべきであることを示唆している。
