基于灭菌效果和活性成分保持的玛咖灭菌方法研究

目的考察不同灭菌方法对玛咖灭菌效果及其活性成分玛咖酰胺和芥子油苷含量的影响。方法分别用湿热、干热、微波、^(60)Co辐射4种灭菌方法对玛咖粉进行灭菌处理,检测灭菌前后玛咖粉的微生物限度指标,并用高效液相色谱法(HPLC)测定灭菌前后玛咖粉中玛咖酰胺和芥子油苷含量。结果 ^(60)Co辐射灭菌、湿热灭菌和干热灭菌效果均较好,达到96.57%以上,微波灭菌效果不明显,灭菌效果只有78.76%;玛咖活性成分检测结果表明^(60)Co辐射灭菌对玛咖酰胺和芥子油苷含量影响最小,损失率分别为2.61%和2.40%,其次是干热灭菌,损失率分别为10.58%和2.99%,湿热灭菌对玛咖酰胺和芥子油苷含量影响...
