苦菜蔬菜纸加工工艺研究
以苦菜为原料,利用正交实验设计优化苦菜蔬菜纸最佳护色条件及胶黏剂复选配方。结果表明,苦菜蔬菜纸最佳护色条件为:碳酸钠用量为1g·L-1,醋酸锌用量为0.1g·L-1,烫漂时间为4min。胶黏荆最优配方为:CMC—Na用量为0.4%,可溶性淀粉用量为3%,海藻酸钠用量为0.8%。干燥条件为:60℃下处理6h。在此工艺条件下,生产的苦菜纸色泽鲜艳,易揭,具有较好的黏弹性。...

Bibliography: | Using fresh Sonchus oleraceus L. as raw material, which were studied on protecting green conditions and optimum tackiness agent conditions. The results showed that the optimum protecting green conditions is Na2CO3 1 g ·L-1, C4H604Zn 0.1 g·L-1 and heating time of 4 min. The optimum tackiness agent conditions is CMC-Na 0.4%, dissoluble farina 3%, sodium alginate 0.8%. The best drying temperature is 60℃ and the time is 6 h. With those processes, the Sonchus oleraceus L. paper showed bright color, good stripping and tackiness.
