Food allergens can cause a series of allergic reactions in body, so it is necessary to detect them using suitable methods. This paper mainly introduced the immune analytical detection technologies to food allergens-western blotting, enzyme linked immunosorbent assay, immunosensor detection, etc. And the detection technologies not using immune analysis were also briefly introduced. The every kind of testing methods has its advantages and disadvantages, so to find a testing method to attain accurate, safe, economic, rapid and high sensitive effect will be the future development direction.
