Bibliography:The shellfish pre-processing, such as cleaning, grading and depuration, etc. , is important shellfish production, impro- ving shellfish quality and food safety greatly. The paper briefly introduces the current situation of shellfish pre-processing, reviews the research progress in its techniques and expounds the existing problems as well as future development orientation in the shellfish industry of China.
