红茶菌菌相分析及优势菌的分离与鉴定

目的:了解红茶菌菌相结构及获取发酵菌株.方法:采用16S rDNA高通量测序技术和传统微生物培养法对红茶菌菌相组成和优势菌株进行分析.结果:高通量测序显示红茶菌的细菌群落丰富度与多样性大于真菌.结论:细菌中驹形氏杆菌(Kohmagataeibacter)、醋酸杆菌属(Acetobacter)、乳杆菌属(Lactobacillus)为优势菌株,真菌中德克酵母属(Dekkera)、接合酵母属(Zygosaccha-ormyces)为优势菌株.传统平板培养法分离得到7株醋酸菌、3株酵母菌和1株乳酸菌,其中食糖驹形氏杆菌(Komagataeibacter saccharivorans)1 株、腐烂苹果...
