乙醇抑制法提取低钾Kappa-卡拉胶
目的:以乙醇抑制卡拉胶溶解替代钾离子凝胶法提取卡拉胶.方法:对卡拉胶提取过程中的碱处理、清洗残碱及过滤后沉淀卡拉胶等工序的乙醇体积分数进行优化,并探索卡拉胶中钾离子的控制方法.结果:碱处理及清洗残碱过程中抑制卡拉胶溶解的最佳乙醇体积分数为60%,卡拉胶沉淀过程中60%乙醇溶液与胶液体积比(V60% 乙醇:V胶液)为5:1;该工艺下卡拉胶得率为(28.76±1.38)%,显著高于传统工艺的(22.9%);钾离子浓度为0.63%,显著低于传统工艺提取的(16.26%);黏度、硬度、弹性、咀嚼性和回复性与传统工艺提取的无显著差异.结论:乙醇抑制法提取的Kappa-卡拉胶K+浓度和凝胶强度显著低于传统...
