커피 유전자원의 항산화 활성과 하이드록시신남산 함량 비교

Hydroxycinnamic acid 함량을 분석한 결과, 평균 23.33±3.76 mg/g이었으며, 5-O-caffeoylquinic acid는 평균 8.28±1.43 mg/g으로 전체 hydroxycinnamic acid 중 약 35.5%를 차지하는 것으로 나타났다. PCA 결과 총 폴리페놀과 caffeoylquinic acids 화합물 함량이 높을수록 항산화능이 우수한 경향을 보였으며, 특히 T.04517, T.04584, T.21315가 우수 유전자원으로 확인되었다. 본 연구 결과는 향후 항산화능이 뛰어난 유전자원 선별 및 육종 연구의 기초자료로 활용될 수 있을 것으로 기대된다. As a major dietary source of polyphenol and antioxidant compounds, coffee plays a key role in the human diet. In this study, 22 germplasms of Coffea arabica L. cultivated in Costa Rica were comprehensively characterized for hydroxycinnamic acid composition and antioxidant activity, with the objective of providing foundational data for the development of novel cultivars. The mean total phenolic content was 7.50±2.07 mg gallic acid equivalent/g. Antioxidant activity, as determined by 2,2-diphenyl-1-picrylhydrazyl and 2,2′-azino-bis(3-ethylbenzothiazoline-6-sulfonic acid) assays, yielded half maximal inhibitory concentration (IC50) values ranging from 26.79 to 40.35 µg/mL and 17.69 to 35.57 µg/mL, respectively. The total hydroxycinnamic acid concentration ranged from 16.13 to 33.24 mg/g, with 5-O-caffeoylquinic acid identified as the predominant component at 8.32±1.45 mg/g, representing 35.5% of the total hydroxycinnamic acid content. Principal component analysis demonstrated a strong positive association between elevated total phenolic contents, caffeoylquinic acids levels, and antioxidant activity. In particular, T.04517, T.04584, and T.21315 were distinguished as high-activity germplasms.
