深圳市主食蔬菜种类调查及其营养价值评价

通过走访深圳市市场农批、超市、商店等,采集了根菜,鲜豆,茄果、瓜菜,嫩茎、叶、花菜,葱蒜,水生蔬菜,野生蔬菜,薯芋等八大类,共105种主食蔬菜。按照国标规定方法,对不同种类蔬菜中蛋白质、脂肪、碳水化合物、维生素、矿物质元素等23个营养指标进行检测,深入分析了不同种类蔬菜的营养价值。研究发现,不同种类蔬菜营养成分差异大,简单食用某一类蔬菜不能满足人们营养所需;以蛋白质、钙、铁、维生素C、胡萝卜素为主要指标,采用平均营养价值估算法精细评价了不同种类蔬菜的营养价值,当地居民选择蔬菜提供了数据支持;此外,还指出了蔬菜营养价值评价存在的问题,提出了建立深圳特色食物成分数据库的研究方向。...

In this study,105 kinds of staple vegetables including 8 categories,such as root vegetables,eguminous vegetables,stem violet cauliflower,eggplan melon fruitage,alliaceous,aquatic,batata-dasheen and wild vegetables were investigated,all these vegetables were purchased from agricultural grant,supermarkets and shops in Shenzhen. In order to evaluate the nutritional values of different vegetables,23 nutritional indexes includingd protein,fat,carbohydrates,vitamins and minerals were measured. The pesults showed that nutritional differences were significant among various vegetables. Therefore,only consume single vegetable can not meet people's daily life nutritional requirements. By employing protein,calcium,iron,vitamin C,caroteneas main indicators and taking average fine evaluation as study method,nutritional values of different vegetables were evaluated. Based on our work,detail nutritional information of vegetables were provided to Shenzhen residents to make sure they can choose vegetables conveniently
