Abstract | In this study, the antioxidant activity of flesh, skin, and fruit of passion fruit grown in Korea was compared. In flesh, total flavonoid content, phosphomolybdenum activity, DPPH free radical scavenging activity, oxygen radical absorbance capacity, NO radical scavenging activity, and hydrogen peroxide scavenging activity were highest among the three sample types. In skin, ABTS free radical scavenging activity and peroxynitrite scavenging activity were highest. In fruits, total polyphenol content and ferric-reducing anti-oxidant power (FRAP) were highest. These results indicate that passion fruit cultivated in Korea exhibits unique antioxidant properties compared to other well-known varieties, suggesting its potential as a valuable functional food ingredient. |
